Like another said, there are many reasons people put items on their 'watch' list. Some may be other sellers, some may be possible buyers, who really knows? Your items are higher priced, which tells me that people may take a bit more time before deciding to buy, thus putting them on their watch list while deciding.

But people click “watch” for a lot of reasons. They could be watching to see how an auction plays out before committing. They could be comparing similar items from other listings. They might not even want to buy the item at all but think it's cool or interesting.

You can add a "Watch this item" link to show up right on the page of Search results, so you can add an item to your Watch list without opening the listing itself.
