This Swiss Chicken is great for one of those busy nights! Just throw this chicken in the oven for a quick and easy meal.

SWISS CHICKEN

I’m back. I survived the St. George marathon. It was brutal. It was unusually hot for this time of year and the heat sucked the life out of me. My Ipod froze right from the get go. It’s happened once before and decided to happen once again at the start of the marathon. I was stuck on two ABBA songs for the whole race. I officially never want to hear ABBA again.

I swore at mile 24 that I would never run again. But…now I’m thinking of all the things that I could have done better and how I can shave off time next time….so I guess my marathon days may not be over.

Since I still can barely walk because I’m so sore, I was thinking of an easy dinner that still tastes good. Even I can hobble around the kitchen to make this easy swiss chicken. It’s so simple but has great flavor. My sister has been making it for years but I saw it over at Real Mom Kitchen and was reminded of its yummy simplicity.Swiss Chicken Recipe - The Girl Who Ate Everything (5)

Swiss Chicken

This Swiss Chicken is great for one of those busy nights! Just throw it in the oven for a quick and easy meal.

Cook Time: 40 minutes mins

Total Time: 50 minutes mins

Servings: 6 servings

Ingredients

  • 6-8 chicken breasts
  • 6-8 slices Swiss cheese
  • 1 can cream of mushroom soup, (or cream of chicken)
  • 1 cup milk
  • 1 (6 ounce box) Stove Top Stuffing
  • 1/4 cup butter, melted

Instructions

  • Preheat oven to 350 degrees.

  • Pound chicken breast to even out the thickness of the chicken. You can place the chicken between to layers of saran wrap and use a rolling pin or a meat mallet if you have one. If I buy the Costco chicken breasts I just slice them in half horizontally and skip the meat pounding step.

  • Place chicken breasts in a sprayed 9 x 13 inch baking dish.

  • Top chicken with the slices of Swiss cheese.

  • In a small bowl, mix soup and milk until well blended.

  • Pour soup mixture over chicken.

  • Top the chicken with the dry stuffing mix. You may not need all of it. Just make sure you have an even layer. Drizzle stuffing with melted butter.

  • Baked covered with foil for 35-45 minutes. Remove foil and bake 5-10 minutes longer. Serves 6-8.

    Is the top supposed to be crunchy? I’ve made this many times and the top has always been crunchy. I thought the stuffing mix would soften a bit, but it doesn’t. Even if I cover with foil when baking. Just wondering. I love this recipe anyway!

    Question: when you say a can of mushroom (or chicken) soup, are you talking the little individual cans or the big, family size cans? I’ve got this wrong before and want to make sure.

    Congrats on the marathon! That is fantastic! I fancy myself a runner too, I just don’t think I have it in me to do a full marathon though! After 13.1 my goose is cooked! That chicken looks great! I know I have made a slightly different version, but it has been a while.

    Wow. That is all I have to say about running a marathon. I don’t even have a bucket list, that way, I don’t have to worry about doing anything like that! 🙂 Anyway, I never have heard of this one (big surprise since I have repelled cooking all of my life).     I did try to look for you at the marathon even though you said not to. 🙂 Shocking that I couldn’t spot someone I’ve never met when mixed in with 7,400 other people! 😉 The heat SUCKED and it was a really hard race. I struggled…HARD core!

    congratulations on the marathon! once you do one…you will always want to do more. try the disney one in orlando!

    i love this recipe since it fits my critera of ~ 5 ingredients and 1-2 steps…. i use the small pieces of chicken (?chicken tenders?) and so skip any steps with manipulating chicken. works fine to start with frozen chicken as well.
