Batter & Breading
There’s nothing more satisfying than that ‘crunch’ you get from a crispy fried chicken drumstick. Or maybe you’re more interested in the layers of texture in a tender pork cutlet dusted with panko. Whichever one you choose, it’s important that the end result be coated, just right, before it gets thrown into the pan or deep fryer; that’s where batter and breading take the stage. There are plenty of ways to prepare a good batter or breading, each with their own pros and cons, but one thing is for sure: When it comes to finding a balance of flavor and crispiness, nothing is better than batter and breading.
What’s the Difference?
Batters
Batters are made by combining flour with a binding agent (usually an egg or milk) to create a thick wet coating for meats, which are then deep-fried.
Breadings
Breadings consist of several layers. The first layer consists of flour to allow the second layer of liquid (usually eggs/milk) to stick properly. The last layer can consist of grains, nuts or bread crumbs.

When to Batter and When to Bread
Dishes can benefit from either batter or breading, but choosing the right method is important to maintaining flavor and texture throughout. Other than pancakes and some lighter cakes, batters are great for protecting softer, more delicate foods in the deep fryer or for preventing overcooking.
Breading on the other hand, often clumps up when placed in the deep fryer, which can create problems for the presentation and taste of the end product and your fryer. It’s because of this that breading is the preferred solution for baking, oven-frying and pan-frying foods. The breading is less likely to clump up and fall from the food, due to these less agressive methods of frying.
Fat & Oil Carry the Flavor
Fats are important carriers of flavor and are needed to support a full sensory experience in dishes, especially in the plant-based and alternative product sector. For example, micro-encapsulated fats can serve a dual role of carrying flavor and extending flavor retention in dairy and dairy alternative products. Batters and similar formulations need to offer the same indulgence and flavor, yet provide a healthier alternative to what’s currently available.
