1. Get the Right Skill
First, you'll need to unlock the Hunter Ability Beast Master. It's a Tier 3 ability, so you won't be able to unlock it until Level 10.
At first, you'll only be able to tame Wolves. At level two, you can tame Lynx, Leopards, and Lions as well. At level 3, you can also tame Bears.

You will never be able to tame a Legendary Animal, but you can definitely get the powerful Alpha Animals that inhabit Tombs.
2. Prepare to Knock Them Out
To tame a beast, of course you need to make sure they're alive. Here are the three surefire ways to make sure your target doesn't end up dead. Just make sure one of these brings your target's health down to zero and not a sword.. or fire or poison.
Unarmed Strike
This is accomplished by sneaking up to someone like you would when attempting a Stealth Attack. Accept, instead of pressing Triangle/Y, you hold down L3. If that isn't enough, you can always use the Ability Vanish to hide once you've weakened an enemy and then get off an Unarmed Strike after you're hidden again.
Sparta Kick
This Tier 1 Ability is useful for more than kicking Mercenaries off cliffs. It also won't kill your target! Pair it with a +20% Sparta Kick Damage Engraving to knock out the beasts more easily.
Knockout Arrows
If you prefer bow and arrow, these are definitely the way to go. You can unlock the ability to craft these by investing a point into the Tier 2 Ability Arrow Master once you reach Level 5. Combine these with a well-aimed Level 2 Predator Shot and high hunter damage, and you may be able to one-shot (or two-shot) a target into submission.
3. Recruit!
The last step is easy. Simply go up to the body and hold L3 to recruit the beast. You will still receive all of the loot and XP you would have acquired by just killing them.
Keep in mind... if you die with this animal by your side and reload, or quit and reload later, it will no longer be tamed and will wreak effen havoc wherever you are.
