You can remove a card from Apple Pay at any time, the process is slightly different for each device.
iPhone or iPad
Go to Settings > Wallet & Apple Pay, tap the card that you want to remove, then scroll down and tap Remove This Card
Or open Wallet app, tap a card, tap the three dots, then scroll down and tap Remove This Card
Apple Watch
On the iPhone, open the Apple Watch app, and go to the My Watch tab
Scroll down, tap Wallet & Apple Pay, tap the card, then scroll down and tap Remove This Card
Or tap Wallet on the Home screen of your Apple Watch, tap a card, press it firmly, and tap Remove Card
Macs with Touch ID
Go to System Preferences > Wallet & Apple Pay.
Click the card that you want to remove, then click the minus (–) sign to remove the card.
If your card is closed it will be automatically removed from your Apple Wallet and you will not be able to make transactions with that card on your device.
If you have an unpaid balance, you may not be able to remove a payment method. Instead, change your payment method. If you still can't remove a payment method, contact Apple Support.
I figured out the solution. You must open the Wallet app from the home screen to remove a card. This is different from opening Wallet by double-tapping the side button on the iPhone.
You can only remove the transactions by deleting your Apple Pay card. After that, you can add it again and all your previous transactions will be deleted from the overview. You delete your Apple Pay card here: Settings → Wallet & Apple Pay → tap on your card and scroll to the bottom and select Remove Card.

You can cancel Apple Music on the web, and cancel Apple TV+ on the web. To cancel other subscriptions billed by Apple, use a Windows PC or Apple device.
One of the reasons you can't add a payment method to your Apple ID might be because the payment method is not accepted in your country. Why is Apple not letting me remove the payment method? If you have an unpaid balance, Apple won't let you remove the payment method from your iPhone.
