We must help the new folks to the industry understand this can be a career, not just a job. A really great career, withmany opportunities to learn both restaurant specific skills, but also the people skills and sales acumen needed to thrive in this world. It is the best training ground out there for life! Right?

For a fact I know this... I am who I am and good at where I shine because of my formative years serving tables, running expos, catering events, tending bar and all the other tasks inside a restaurant. As a seasoned sales executive, I have read books upon books, and attended 1000’s of seminars - but nothing developed my skill sets more than working in restaurants. It is an education that just can’t be beat.

But new generations are growing up with a different mindset. (We don’t have to get into this here!) What I do want to dig into, and spend my days helping operators develop, are unique and interesting ways to develop our folks on the frontline - to develop their confidence and let them know their ideas matter, and many times can positively impact our businesses. By making the training unique and fun, we can accomplish our goals and their goals at the same time.

Let’s dig in and embrace the 'First Pancake Rule'!

The "first pancake rule" is a common saying or concept in cooking, especially when making pancakes. This is because the first pancake is often used to gauge the temperature of the griddle or pan and to adjust the heat accordingly. As a result, it might turn out slightly different in terms of color or texture compared to the rest of the pancakes.

The idea behind the first pancake rule is that it's okay if the first one doesn't turn out perfectly; it's a practice round for getting the cooking conditions just right. Once you've made the necessary adjustments, the subsequent pancakes are expected to turn out fantastic.

How does this pancake challenge impact our restaurants? Specifically on helping our teams perform the behaviors required to generate the revenue needed to thrive.

🥞 Using the 'First Pancake Rule'? 🥞

Just like the first pancake isn't always perfect, the 'First Pancake Rule' acknowledges that the initial service encounters for new servers may not be flawless. It's a strategy that encourages learning through practice, feedback, and continuous improvement.

In our trainings, we take the wisdom of the 'First Pancake Rule' to heart.

We understand that for new servers, the initial encounters with customers can be nerve-wracking. To overcome this anxiety and boost their confidence, we introduce them to the concept of the 'First Pancake Rule.'

Our approach is simple but effective. We encourage new servers to view their first interactions with guests as practice rounds. Just as the first pancake isn't always perfect, we emphasize that the initial service encounter may have its imperfections.

This reframing of perspective allows our servers to ease into their roles, knowing that learning and improvement are at the core of their journey.

Here is the Pancake Framework:

  • Practice Matters: Servers apply the 'First Pancake Rule' to understand that the first service encounter is a practice round.
  • Learning Curve: Learning the ropes takes time; initial mistakes are part of the process.
  • Feedback is Key: Feedback and guidance help servers improve after their initial interactions with customers.
  • Continuous Adjustment: Servers adjust their approach based on feedback and experiences.
  • Embrace Improvement: Improvement is ongoing; even seasoned pros refine their skills.
  • Celebrate Wins: Small victories motivate servers on their journey to excellence.
  • Supportive Environment: An environment where servers feel comfortable seeking help and learning from one another.
  • Measure Progress: Keeping an eye on performance metrics tracks progress and identifies areas for growth.
  • Customer Delight: The 'First Pancake Rule' not only builds server confidence but also leads to happier customers and increased sales.
  • Team Cohesion: Implementing this rule fosters camaraderie among servers, as they support each other's growth and success.

When I sit down with nervous first time servers (remember the first time you opened a bottle of wine at a table?) and we get to talk about “flipping pancakes” I always notice the engagement and inspiration in their eyes.

By applying the 'First Pancake Rule' in our sales training, we create a supportive environment where our servers feel comfortable seeking help and learning from one another. You create a mindset that embraces learning from initial mistakes, practicing to improve, and continuously refining sales skills. This approach can lead to more effective sales teams and ultimately boost restaurant sales and customer satisfaction. We celebrate their achievements, no matter how small, and foster a sense of camaraderie among our team.

Don't let fear hold your servers back from becoming top-notch sales professionals. Embrace the 'First Pancake Rule' and watch their confidence soar, one flip at a time!
