Setting up new iPad 10th gen, started to data transfer, want to cancel and not working. Also been over an hour saying setting up you Apple ID and circling

Hello Help-333,
If you want to stop the data transfer, just turn off the device. Once you turn it back on, it will take you back to the first page of the setup menu where you can choose to set it up as a new device without restoring data to it.
If the device is totally unresponsive, use these steps to force restart it:
1. Press and quickly release the volume button nearest to the top button.
2. Press and quickly release the volume button farthest from the top button.
3. Press and hold the top button.
4. When the Apple logo appears, release the top button.
If the data has already restored to the device and you want to remove it, just erase the device in Settings General> Transfer or Reset iPad > Erase All Content and Settings.
