Go to Settings -> tap on your name (Apple ID, iCloud, Media and Purchases) -> scroll to & tap Payment & Shipping -> Login required. Then select Apple Pay -> Click Open Wallet. Select the one that you want to remove.

If you can't remove it, you might need to cancel subscriptions, turn off purchase sharing, or pay an unpaid balance.
