Hope you are well and enjoying your week! I’m writing to you from the volcano caldera of Santorini, Greece. Wah! I feel really inspired and awakened here. I will be sharing more soon. But first I want to share this week’s recipe with you, which I created right before I left.

Before we get into the recipe, however, I first need to thank and congratulate everyone who participated Beauty Detox Blogger Recipe Assignment last week, which was ourCauliflower & Mint Quinoa Salad.I love picnic food!

Each week, the participation grows and the recipes just keep getting better and better. I can’t tell you how thrilled I am to see these amazing creations flow in each week!

When we decided to create theBeauty Detox Blogger Program, I didn’t know what to expect because it was so new.But now, I can wholeheartedly say that I’m happy beyond belief that we decided to move in this direction. I feel like everyone is learning, sharing and most importantly – GROWING – in amazing new ways through the process of creating and blogging.

Got it? Great! Now here is this week’s recipe!

This is a very easy recipe–you just throw everything in the blender! I’ve had something similar with mango, but I prefer to make this with dip with veggies instead of fruit because of the coconut oil. For your assignment, I want you to make your own unique veggie dip! You can try different veggies, and different spices and flavors, or use these as a base. Go to the farmer’s market or local market, and get inspired by some of your favorite veggies!

Here’s my version.

Mellow Yellow Squash Dip

Makes about 2/3 cup

1 1/2 cups yellow squash, sliced
½ Tbs. ginger, peeled and chopped
1 garlic clove
2 Tbs. coconut oil
2 Tbs. water
½ tsp. salt (or to taste)
½ tsp. fresh chilis, chopped (the bigger ones are less spicy)
1 Tbs. lime juice

Blend everything together until smooth and enjoy with veggie sticks!

Now, let’s wrap this up and take action. Here’s what to do now:

1) Prepare your own version of the recipe and take nice pictures of the process and final dish from multiple angles. Sometimes I like to take pics of the ingredients as I’m making it, so that others can see the process. And remember to have plenty of light in your kitchen!

2) Put your recipe up on your blog, share your experience, and then link back to this recipe post.

3) Put your recipe post into the Facebook group and/or on our main Facebook page, so that others in the community can see it!

    The volcano caldera of Santorini, Greece?!! Will there be pictures in the future?

    This sounds delicious! I wish I could digest coconut oil and other healthy fats, but for some reason, they all make me very ill-except small amounts of earth balance. I think it stems from a gall-bladder removal some time ago.

    I tried taking betaine which has hydrochloric acid, but even small amounts of beets cause a lot of pain and burning. Is there any hope for digesting these healthy fats? Can the beauty detox program actually help with this?

    For now, I’ll skip the coconut oil, and enjoy the rest of this delicious dip. Thanks so much.

      Hi Michelle! Yes, will share more. It’s strange that coconut oil gives you issues because it should be the one fat you handle well without a gall bladder, as coconut oil does not require bile to be digested/emulsified by the body. You may also try Palm Oil, which has a similar fatty acid composition to coconut oil. I feel like any other fat would be even more challenging.

      Overall, yes the Beauty Detox plan will help with this — there’s actually very little recommended fat in the diet overall (10% or less of calories) — just a small amount of avocado, nuts/seeds, and coconut oil as your body needs it.

        I know. It’s very strange, but I come down with flu-like symptoms every time I have fats-especially coconut oil and other nuts. Animal fats too.
        My brain gets foggy and I can feel sick for two days straight.
        I am not certain why. I absolutely love coconut everything, but it doesn’t love me.

        That is an interesting fact about coconut oil-that it doesn’t need bile to digest it! If this is true then it makes my case all the more mysterious. We have no insurance or money for doctors so I am trying to do what I can, but it’s been hard!

    I have to be honest with you. I bought your glowing lean system. However I think it’s really unfair that I spend an awful lot of money and not at least have books to go wih it. Every time I want to review it I have to watch videos online. Really? Who has the time? Basically it looks to me like you were trying to spend as little money and make money. You didn’t even give us something we could download to our own computers. I never even got through it all because it took too much time.

      Hi Michele, did you see there are fairly lengthy PDF’s that we include with the program? You can download those easily and they provide a lot of the information that you’d find in the videos. Also, we went to fairly significant expense to create an advanced section while working on a movie set in Cleveland, above and beyond the initial version that we created. I feel like maybe you didn’t see everything that’s included. Please re-check and let us know — we want you to be happy!

        I only bought the book, Kimberly, as well as the recipe book. At the moment I can’t afford the whole program, that’s why I have had these extra questions. I do hope to be able to afford it in the future, but I want to do all I can with what I do have!

    The Mellow Yellow Squash Dip is lovely. But I often like to make a lunch of lots of raw vegetable slices and a dip, and as such it’s a a bit insubstantial. So I added about 12-15 soaked and peeled raw almonds and ground them up with all the rest. The color was just as beautiful, the consistency much smoother and creamier, and the taste deeper and richer. I much prefer it this way. Try it. You might too!
