Instructions

Cut the green cabbage in half and cut off the stunk, cut into strips or shred it if necessary. You can also use pre-shredded cabbage.

Sauté the diced onion in a non-stick pan with little water on medium heat. Add the sliced cabbage and sauté briefly and deglaze with broth.

Let the cabbage mixture cook for about 10 minutes. Mix the cashews with the water in the high speed blender and blend until it is creamy.

Now add the lemon, salt, pepper, creamy sauce and chopped parsley to the cabbage. Let it cook for a couple seconds.

Season to your own taste with a little salt and pepper.

Hint: You can sauté the cabbage in a little bit of water or vegetable broth instead of oil.

Substitution

  • Cabbage: I love to use savoy cabbage, but if I do not find any Savoy Cabbage, I love to use Green Cabbage, Napa Cabbage, Purple Cabbage, Brussels Sprouts. Pretty any cabbage will work to make this tender cabbage.
  • Onion: I use usually yellow onion, but you can also use red onions or shallots.
  • Garlic: If you do not have fresh garlic. You can also use some garlic powder. Or ready to use minced garlic.
  • Vegetable Broth: I love the flavor the veggie broth adds to this cabbage dish. You can also use water.
  • Cashews: With the Cashews, we get a super creamy cabbage side dish. If you want to use something else, you can also try white beans or sunflower seeds, pumpkin seeds. Or a mix of both. You can also use coconut milk.
  • White Pepper: I always have white pepper at home, it has a milder flavor than black pepper. You can also use black pepper for this healthy dish.
  • Cashews: Instead of cashews you can also use tahini sauce or other nuts/ seeds like pumpkin seeds, sunflower seeds.
  • Lemon: Instead of lemon juice, you can use lime juice. Just use what you have on hand.

Variation

  • Sauerkraut Style: Instead of having fermented Cabbage you can also flavor it like Sauerkraut, add someCaraways, Apple Cider Vinegar and Bay leaves.
  • Asian Style: Soy Sauce, Ginger, Rice Vinegar, chili powder and roasted sesame seeds will add a nice Asian flavor. You can serve it with some Fried Tofu and Noodles.
  • German Style Red Cabbage: You can add flavor with some Apple pieces, Apple Juice to your red cabbage to get the traditional Rotkraut.
  • Cabbage Curry: Add somecurry powderto your sautéed cabbage to make curry flavored creamed cabbage recipe. I always experiment with different kind of herbs and spices.
  • Vegan Southern Fried Cabbage: Red Pepper Flakes, liquid smoke will add a great flavor.

Top Tips

You can shred the cabbage pretty quickly in a food processor if you want to.

For this, cut the head of cabbage in bigger chunks (quarter), remove the root and shred it in your food processor.

I usually use a knife and cut in slices to have thicker slices.

This scrumptious sauteed cabbage combines the tangy taste of fresh lemon juice, smoky carrots and salmon, plus brown rice. Ingredients

  • 1 savoy cabbage
  • 1 onion
  • 1 cup (250ml) vegetable broth
  • 1 clove of garlic
  • ⅓ cup (50 g) of cashews
  • ⅔ cup (150 ml) of water
  • grated peel of ½ lemon
  • White pepper
  • ½ bunch of parsley
  • grated nutmeg
